Fiesta Casserole

Ingredients

  • 1 cup lean ground beef
  • 14 cup onion chopped
  • 12 teaspoon ground black
  • pepper
  • 1 14-ounce can pinto beans
  • 1 14-ounce can diced tomatoes
  • 1 4-ounce can diced green
  • chiles
  • 1 clove garlic chopped in small
  • pieces
  • 1 teaspoon chili powder
  • 12 teaspoon ground cumin
  • 12 teaspoon dried oregano leaves
  • 12 cup tomato sauce
  • 3 corn tortillas torn in pieces
  • 1 cup low fat cheddar cheese
  • shredded

Directions

  1. 1. Wash your hands and clean your cooking area.
  2. 2. Clean the tops of canned food items before opening them.
  3. 3. Preheat oven 350F
  4. 4. Brown ground beef with onions in large skillet. Drain off fat, once meat is brown.
  5. 5. Add ground black pepper and beans to meat.
  6. 6. In a medium saucepan, combine tomatoes, chilies, spices, and tomato sauce.
  7. 7. Bring mixture to boil, when mixture bubbles. Lower heat, cover and cook for 10 minutes.
  8. 8. In an 8 inch x 8 inch baking pan, spread thin layer of tomato sauce on bottom of pan.
  9. 9. Top with half of torn tortillas and beef mixture.
  10. 10. Cover with remaining tomato mixture and half of cheese.
  11. 11. Repeat layers with remaining ingredients, ending with a layer of cheese.
  12. 12. Bake for 30 minutes and serve warm.
