Enchilada Rice

Ingredients

  • 1 lb extra lean ground beef (round or chuck)
  • 12 cup sliced onion
  • 12 cup chopped bell pepper
  • 4 cups cooked brown rice (about 2 cups uncooked)
  • 1 (15 1/4 ounce) can no salt kernel corn (drained)
  • 34 cup shredded, reduced fat cheese
  • 4 tbsp low sodium taco seasoning dry mix

Directions

  1. Wash your hands and clean your cooking area.
  2. Brown ground beef, onion, and bell pepper in skillet.
  3. Drain meat.
  4. Heat cooked rice, meat mixture, corn, and taco seasoning in skillet for 10 to 15 minutes. (Add water to prevent the rice from sticking).
  5. Add cheese and heat until cheese melts (about 5 minutes).
